Bottling Biodynamics

When it comes to sustainability in the wine world, the term “biodynamic” carries more weight than the word “organic.” Biodynamic farming is based on Austrian philosopher Rudolf Steiner’s “spiritual scientific” view of the farm as a holistic living organism and practices he introduced in the early 1920s designed to keep the farm in absolute harmony with nature.

Recently, biodynamic methods have become more widely adopted in the global wine industry as passionate converts reap rewards from harnessing nature’s power that far exceed simply bottling fine wines-environmental stewardship, financial savings and a renewed connection with the earth, to name a few.After the first couple of harvests from our own vineyard, we realized how strong an influence farming practices have on the quality of the wine,” recounts Peter Work, owner of Ampelos Cellars. “At the same time, our relationship to nature in general, and our land in specific, changed after we left the big city and moved here-we then decided that converting the vineyards to organic and biodynamic would be the logical approach. Many things have changed in our life because we now look at the world around us differently and we constantly challenge ourselves to improve our practices and consciousness of mother nature.”

Biodynamic viticulture goes beyond organic to incorporate soil enrichment, hands-on field work and other tactics that contribute to a balanced, healthy ecosystem. Standard biodynamic preparations used to encourage soil vitality include herbal sprays and specialized composts that act like homeopathic medicine for the soil. Cover crops such a fava beans, clover and barley are planted between rows to provide nitrogen naturally to the vines. In lieu of machinery, vineyards are manicured by hand. Sometimes, specially trained sheep are brought in to eliminate weeds with minimal impact.

Finally, the part that really raises eyebrows: all actions in the field are dictated by lunar cycles to synchronize with cosmic forces.While not all winemakers agree with the comprehensive biodynamic philosophy, most agree with many of the overarching principles. As winemaker for Clos Pepe Wes Hagen says, 
“While I will never farm ‘kneejerk’ organic or BD just for the marketing of it, I do believe that minimizing chemical inputs, using livestock and their manure and treating the soil with organic matter makes better wine-and clearly shows more ‘somewhereness’ in pinot noir.”
